Zucchini In Herb
Cream Sauce.

Visit any local farmers market this time of year and you will find a large selection of fresh herbs and gorgeous vegetables.
There you will find an abundance of summer squash. Our favorite at Why Men Are is the zucchini.
While shopping for the perfect one, make sure you choose a zucchini that is firm and heavy. A strapping one. It should be completely free from blemishes with a smooth dark green skin. If you get lucky the farmer may have zucchini blossoms. The blossoms are a delicacy . Stuffed with ricotta and parmesan cheese then dipped in to egg and flour and deep fried. Yummy!
Whether steamed, sautéed, stuffed, baked or fried, zucchini is a nourishing meal choice. Our kitchen has combined zucchini, fresh herbs, pasta and cream for a delicious main course. Try it and let us know what you think.
Ingredients:
Onion-1 medium finely chopped.
Garlic-2 cloves minced.
Zucchini-2 large shaved into ribbons with a vegetable peeler.
Salt-1 teaspoon.
Black Pepper- 1/2 teaspoon.
Tomato-1 medium diced.
Dry White Wine or Vermouth- 1/2 cup. Fresh Basil-2 tablespoons coarsely
chopped.
Heavy Cream-1 cup.
Romano Cheese- 1/2 cup grated. Lime-1/2 juice and grated rind.
Fettuccini-1 pound cooked al dente.
Olive Oil-3 tablespoons.
Butter-3tablespoons.
Sautee the onion and garlic in the olive oil and butter in a large non
stick pan. Cook on medium heat until translucent. Gently toss in the
zucchini ribbons and continue cooking for 3 minutes. Add the salt,
black pepper, tomato, wine, basil, lime rind and juice and simmer mixture
for 15 minutes.
Meanwhile cook the pasta until al dente and drain. Add the pasta in to the sauce making sure that all the pasta is coated. Cook for 5 minutes longer. Turn the pasta in to a large bowl. Sprinkle with the cheese and toss. Serve with a crusty French bread and white wine.
