Wasabi Stuffed Filet Mignon.                          

In New York City there is a restaurant named Maison Japanese.   They offer a delicious selection of food blending the Japanese and French styles.  I used to go with a friend of mine, David Hacker.  We used to have a grand time there.  Except for the evening when I stacked the martini glasses to high and they came smashing down! 

The appetizers were always exotic dished such as Lobster Ravioli or a special Warm Duck Salad in a Spicy Sesame Sauce. The entrees were always unforgettable. 

One comes to mind however.  A juicy filet of beef pan seared in butter and stuffed with a hot wasabi mustard.  Wasabi is a Japanese mustard made from powdered Horseradish.  It is available in most supermarkets.  The beef is cooked to perfection.  Then a deliciously rich beef sauce is spoon around the beef.  This is one of our favorite beef dishes.     

Ingredients: 
Filet Mignon-1 pound. 
Wasabi Mustard- 2  1/2 teaspoons
Kosher Salt-1 teaspoon. 
Black Pepper- 1/4 teaspoon. 
Olive Oil-2 tablespoons. 
Beef Bouillon Cubes-2. 
Hot Water-2 cups. 
Flour-2 tablespoons. 
Worcestershire Sauce- 1/2 teaspoon. 
Soy Sauce-1 teaspoon. 
Butter-2 tablespoons.         

Instructions:    
Cut a pocket in to the filet mignons.  Salt and pepper the cavity and outside well.  Stuff the pocket with the Wasabi  Mustard. Set aside.  Place the olive oil and 1 tablespoon of butter in to a frying pan.  On a medium flame sear the meat for 5 minutes on each side for rare.  Remove the filet on to a plate.  Dissolve the bouillon in the hot water and pour in to the pan.  Scrape the drippings from the bottom of the pan to maximize the flavor.  Add the Worcestershire Sauce and Soy Sauce. 

Place the flour in a small bowl and pour some of the hot sauce on top of it.  Mix the flour vigorously until it dissolves.  Return the flour mixture to the pan.  Continue mixing until the sauce thickens. Add the remaining tablespoon of butter.  Mixing well .  Salt and pepper to taste.  Place the cooked beef on to a plate and drizzle the beef sauce around the filet.   Serve with some lovely garlic mashed potatoes and some fresh steamed asparagus
